Protein White Chocolate Eclair Cake

It’s not very often that you’ll catch me eating desserts that aren’t completely decked out in dark chocolate. But this one? I’ve had it over and over and over again — and I fully plan to keep doing so. Maybe the white chocolate drizzle on top helps. 😉
This version of Eclair Cake is incredibly simple to make, and the hardest part is honestly just waiting. It tastes best after sitting in the fridge for a couple of hours, so yes, it does require a little willpower. But I promise, it is so worth it.
***Pro tip: depending on the glass container I have, I double/triple the recipe so that it fits well. For example, my glass container fits ~2 squares of graham crackers in one layer, so I always double the recipe. You can also make a full casserole size for parties (or yourself!!!) and adjust the portions depending on how many graham cracker squares it fits!
